Cornbread

There are a thousand recipes for cornbread out there.  Here is a super simple one. You can bake this bread on a sheet pan, in a cake pan, as muffins, in a cast iron skillet… you get it…

Ingredients

dry

6 oz cornmeal

6 oz AP flour

5 oz sugar

1 1/2 tsp baking powder

1/2 tsp baking soda

3/8 tsp salt

wet

12 oz buttermilk

3 eggs

3 oz melted butter

Method

  1. Mix dry ingredients.
  2. Mix wet ingredients.
  3. Mix wet into dry and bake at 375 degrees. Cooking time will depend on pan (in general 20-50 minutes).  Cornbread is done when an inserted toothpick comes out clean.
  4. Serve warm.  Cold cornbread is an injustice.
